I'm really interested in following this topic! Scallops are my husband's favorite and so far the suggestions are wonderful for a Valentine's Day dinner! Keep 'em coming!
I also have a great recipe for "strawberry fluff" for dessert (but you can also make it a 'raspberry fluff"- our fam fav)
1 Angel Food Cake (cubed, or chunked in 1 inch pieces) 1 pkg frozen chopped strawberries (or 2 pkg fresh-chopped) 1 pkg strawberry (or raspberry) jello 1.5 C boiling water
In a serving bowl, place Angel food cake pieces.In a separate bowl, mix jello powder with 1.5 C water until dissolved. Let cool to room temp and add fruit to jello. Pour over Angel Food cake pieces, refrigerate at least two hours. Serve with Fat Free whip topping if desired.

why dont you pan sear the scallops in a touch of olive oil (make the pan really hot) and add a bit of black pepper and fresh lemon juice to the pan - be careful not to cook to long as they over cook fast
steamed aspargus with fresh lemon salt and pepper
maybe a brown rice or wild rice pilaf
sweet treat angel food cake with fresh strawberries and powdered sugar
low fat chocolate mousse
berry parfait with chocolate sugar free fat free pudding
I'm planning to cook a Valentines Day dinner for two for my fiancee this year. I want to keep it fairly simple and light enough that we won't feel stuffed and awful afterwards. I'm thinking of including scallops, since they're his favourite. Of course, we also need to have a romantic dessert!
Does anyone have any ideas for a Valentines Day Menu?
