This is my favorite way to eat scallops !!
1 pound sea scallops
2/3 cup Panko breadcrumbs
4 tablespoons butter, melted
2 tablespoon fresh lemon juice
2 garlic cloves, finely minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Place scallops in a baking dish that has been sprayed with Pam.
Combine breadcrumbs and remaining ingredients, and sprinkle over scallops.
Bake at 425° for 20 minutes or until topping is golden.
Serve with some steamed green beans and sprinkled with sliced almonds.
Make an angel food cake and top with fat free cool whip and strawberries !
