Mmmm I should buy squash and zucchini next time I'm at the grocery store...I rarely eat them, so it'd be good to add in a little variety!

I found a new recipe using yellow squash & zucchini, modified it a bit and have been fixing it at least once a week.
cut up 2-3 squash & 2-3 zucchini and 1 onion. Season with your favorite seasonings (I use a little garlic powder and Emeri's Seasoning. Add 1/4 C Italian Blend Shredded Cheese. Bake for 30 minutes. Add another 1/4 C of the cheese on top and bake another 10 minutes.
Its delicious!! Great right now with the squash and zucchini being in season and plentiful at the farmers markets!! Just wanted to share!
