Substituting ground turkey for ground beef will really cut down on your fat for that meal. Also, you can buy turkey burgers that are 93% fat free or turkey breasts that are 99% fat free to give you a lower fat meal one day. I'm not saying eat this all the time, but maybe once a week you could opt for a lower-in-fat turkey meal.

I try to get no more than 35 grams of fat per day, my range is something like 27-45 and 35 is a do-able number. I count the fat grams in my head throughout the day because it's easier than counting calories (which I do with my tracker) and it's not too hard to keep track of.
So, take a look at your tracker, pick a number in that range that seems like a reasonable goal to you, and don't sweat it too much if you go over by 2 or 3 grams on some days.

Prepared foods are often a big source of fats (not to mention other things that challenge weight loss, like excess sodium). Could that be a source of your macronutrient balancing issues?

But we need more details on your typical day. I've never been able to go over on my fat without going over on calories as well. Do you cook with a lot of oil? Eat nuts by the pound? greasy fast food? but that would lead to going over on just about everything
You don't say what kinds of food you normally eat, so I'm not sure what you could cut out to help...I know my fats go way up when I eat nuts/peanut butter, etc.
