LEMON ARTICHOKE PESTO

1/4 cup chopped basil
4 garlic cloves - or more if you like
4 tablespoons lemon juice
1/4 teaspoon cayenne pepper * optional *
1 cup pine nuts
1/2 cup olive oil
salt to taste
1 (8 ounce) package frozen artichokes, thawed and chopped or canned if you can't find frozen in your market
1/2 cup grated Parmesan cheese

Place the basil, garlic, lemon juice, cayenne pepper, pine nuts, olive oil, and salt into a food processor. Pulse until smooth, then pour into a large bowl. Gently stir in chopped artichokes and Parmesan cheese.

Summer time is fresh basil time. I'm looking for dynamite basil pesto recipes, without cheese. a little olive oil ok. For the nuts instead of pinon. I'm looking for a recipe with a few walnuts or sunflower seeds, and has anyone tried adding a teaspoon of ground flax seeds to the usual basil, nut, garlic, olive oil recipe? I'm also looking for a good pesto recipe with artichokes and lemon. Thanks.
