Low Cal Apple Bundt Cake

3 eggs or eggbeater equivilent
1 cup applesauce
1 tablespoon vanilla extract
2 cups chopped apples
1 1/2 cups sugar or Splenda equivilent
3 cups all-purpose flour
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon ground nutmeg
1/2 teaspoon baking powder
1 cup chopped walnuts

In a large mixing bowl, beat the eggs, applesauce and vanilla.

Add apples and sugar; beat for 1 minute.

Combine in another bowl the flour, cinnamon, baking soda, salt, nutmeg and baking powder; add to apple mixture until blended.

Stir in walnuts.

Pour into a greased and floured Bundt pan.

Bake at 325 degrees F for 50-60 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Make a glaze with confectioner's sugar and milk.

Not sure if there are any light ones in there, but 30 days of big bundts has to be good!

I am looking for "light" bundt cake recipes that DO NOT use prepackaged cake mixes. I have never used a cake mix in my almost 50 years on the planet and I am not starting now! I did find one for Thanksgiving - a Pumpkin-Spice cake made from scratch that was quite tasty. But now I am looking for more!
