ITALIAN CHICKEN CASSEROLE
1 pound boneless skinless chicken breasts cut in half
1 onion sliced
1 green pepper sliced
1 small or large can sliced mushrooms -drained
1 large can or 2 small cans diced tomatoes with the juice
1 green zucchini sliced into circles
1 yellow zucchini sliced into circles
1 heaping tablespoon Italian seasoning
2 cloves garlic chopped or more if you like
1/2 teaspoon salt
sprinkle of black pepper if you like
Place chicken in a in baking dish , surround it with the veggies & garlic and then pour the can of diced tomatoes over the top. Sprinkle the seasonings. Cover tightly with foil and bake 1 hour at 350 degrees.
Serve with angel hair pasta , brown rice or just as it is !!!
This makes a lot, nice for leftovers for lunch too.
