I'm on a low carb diet. Last night made a delicious chicken/broccoli casserole with nothing other than chicken, broccoli, and a can of cream of chicken soup. To my husband's portion, I added some whole wheat linguini, but I didn't have any of that. It was delicious, though, and stayed within my carb limits. And VERY easy to make!!!! Thought later that I could have added a bit of mayo to it, but it was good anyway. And you can make it with almost any veggies!
