emoticon I like to take a can of cream of chicken soup and a can of cheddar cheese soup and put chicken breast in till done ! emoticon

Yum, that sounds good--I may make that for dinner tonight! I sometimes do a super simple oven version of this - pour salsa over chicken breasts and bake it, sprinkling the cheese over for the last 10 minutes or so of cooking time.

MEXICAN CHICKEN AND RICE

1 pound skinless, boneless chicken breast halves - cubed
1 envelope of taco seasoning
1 tablespoon olive oil
1 (16 ounce) jar salsa - mild medium or hot your choice
2 cups hot cooked brown rice
sprinkle of Paprika
1/2 cup shredded Mexican cheese


Take chicken and cut into cubes. Place chicken in a ziploc bag with the taco seasoning shake until chicken is coated with seasoning.

In a large skillet over medium heat cook the chicken in the oil until cooked through. Add the salsa and bring to a soft boil. Turn off the heat add the cheese and paprika and cover and let sit for 5 minutes

Serve over brown rice.

***optional mix in's***
mix in when you add the salsa

jalapeno peppers
chili peppers
a squirt of lime juice
can of black or red beans - drained
can of mexican corn - drained
