I'm making hash brown cassarole for my work's potluck. It's definitely not the healthiest (potatoes, sour cream, butter, onion, cream of chicken soup, cheddar cheese...) but it's sooo good, and I figure it's better to bring it to share and just have a little, rather than to make it with dinner some night and have the entire pan as leftovers to eat by myself!

I plan on taking green bean 'casserole' in my crockpot for our Christmas luncheon next week. I just make it as I would in the oven but dump it in the crockpot the morning of. Crockpots come in hand when you want to take something hot to the office.

On other occasions, I've made vegetable soup, chicken vegetable soup, cheesy potatoes, and put other veggie-based items in a crockpot.

They're good at room temp and because of the pesto and tomatoes, they look Christmassy. Not sure they're super healthy but that's what's nice about a potluck, you can make something that you wouldn't normally eat and just have one, since everyone else will be eating the rest :)

Do you have a crock pot? Maybe you could make up some baked beans. They go well with ham.

hummus and veggies isn't a bad idea anyway. I find that the potlucks are filled with things that i really shouldn't or can't eat even in moderation. make your own hummus or dip for the veggies. I make a zucchini hummus or cucumber hummus (no chickpeas in them). That way at least you know there will be some items that you can certainly eat.

Got an e-vite today that we are having a potluck for lunch next Tuesday. There is a sign up sheet on the door to the conference room with one entry thus far- a spiral ham. I was thinking it would be more appetizer-y since it's lunch and we don't have an oven.

I was initially going to go with hummus and veggies (healthy and easy to transport), but now I feel like I should bring something different. I want to bring something festive, but our "traditional family Christmas food" isn't exactly festive...

Any ideas of what I could bring?

There is a chance my husband will be home during the day Tuesday and can deliver my heated item to the office, provided it is something I can prepare in advance and have him pop into the oven.
