Lunch is always the most difficult for me too. I have been using left over chicken and either adding to salads or making it with whole grain pita's. I have also been packing 100 calorie snacks which help throughout the day. 1/2 cup of 1% Fiber One cottage cheese with a peach (great when they were in season) but any fruit will do. 100 calorie granola bars or string cheese and a small apple.
Hey! :D This is my first board post so I hope I have put this in the right place.
I want to change my eating habits to clean eating one, being inspired by Mike Chang and SixPackShortcuts on Youtube. I have my breakfast (Porridge and fruit), snacks (fruit and veg), drink (water) and dinners sorted (Chicken Breast, veg, perhaps some brown rice, fish). But I don't know what to do for Lunch, I will nearly always be eating lunch at University and usually go to Tesco's for a sandwich meal deal but I want to make a packed lunch.
I'm a bit sick doing my usual gorge so I just want something very simple, cheap and more or less the same each day but hitting all my nutrition needs.
Does anyone have any simple, quick and cheap packed lunch ideas, preferably cold as I can't heat anything up? I am stumped!
