wow cheff chip, that great, I was going to say soft tofu is an excellent sub for cottage cheese, low fat high calcium too.

curdle 4 cups whole milk with 1 tsp vinegar...the curds are guess what...cottage cheese

There isn't anything specifically for cottage cheese but it shows cottage cheese as substitutes for some yogurts, etc- so you might be able to reverse that!

NonFat sour cream or nonFat cream cheese are options.

I wanted to make up a cheese biscuit recipe that calls for 1 cup of cottage cheese, but I'm all out! I won't be able to make it to the grocery store today...so is there anything I can use instead?
