Roast up a big tray of veggies - zucchini, eggplant, bell peppers, red onion, tomatoes, garlic - and then toss it with cooked whole-wheat pasta and splash with balsamic. Grate a touch of parmesan on top if you want, too!
(As for my own dinner, I had a salad. It's in my blog! Greens, cucumber, grape tomatoes, red onion, quinoa and sunflower seeds. I forgot the roasted peppers! More for tomorrow, I guess... Plus I had a slice of toast on the side.)
