The Lord is my strength and i know i can do better with the Lords help. The Lord laid it on my heart to start a team called GOD ANSWERS PRAYER AND I WOULD LOVE TO HAVE ANYBODY THAT WANTS HELP TO LOSE THEIR WEIGHT TO JOIN . I KNOW I CAN'T DO THIS WITHOUT THE LORDS HELP !

Cook carcass with left over meat on it and make chicken soup.

i liked to take leftover grilled chicken and make a stir fry, saute onion and mushrooms in olive oil. cook until soft and then add chopped zucchini and yellow squash until soft. then add chopped chicken to vegetable mixture. add Italian seasoning, garlic powder and onion powder, soy sauce and worchestershire sauce. Stir around and serve over couscous or rice. very delicious.

Right now I'm eating an awesome turkey and corn chowder that would be good with rotisserie chicken instead of the turkey. We grilled the other night, so I threw a bunch of sweet corn and halved red potatoes on the grill so they had a nice char on them, but for a quick recipe, you could use sweet corn and just nuke the potatoes in a covered container with 1 T water for 6 minutes. Anyway, it was 4 ears worth of corn kernels, about 6 small red pootatoes, quartered, about 2 cups of diced cooked turkey. First, took 2 medium onions sauteed with 4 cloves of garlic and 3 chopped serranos in olive oil. Then added some turkey stock, the corn, potatoes and turkey, plus oregano, cumin, chile powder, salt and 2 bay leaves, plus some light cream cheese that was laying around, brought to an easy boil then back down to a simmer. Served with salsa and sour cream. Soooo good!

I like my chicken salad with some crunch so I'd add chopped celery and onion. The curry and jalapenos sound good - lots of heat going there!! Might just have to pick up a rotisserie one of these nights so I can make some salad for lunches.

I like to take my leftover rotisserie chicken and make quesadillas with it. Fresh salad on the side and you have a super-fast meal.

I'm thinking chicken salad too...the one below sounds good, but I would throw together the chicken, Kraft olive oil reduced fat mayo (sooooooo soooo good), chopped onions, chopped celery (or ground celery),chopped dill pickles, parsley, and poppy seeds (love em in chicken salad) could even throw in some craisins and pecans (but very few pecans because of the high fat content.) Mmmmm.

A chicken salad, of sorts--

Mix Greek yoghurt (or mayo) with curry powder, add minced rotisserie chicken and minced pickled jalepenos--ta da!

So good and a great texture.
