I'm pretty new to roasting and I loved it--it really amplifies flavors while keeping things juicy and it's nice and quick. I recently roasted some salmon (450 for around 8-10 minutes) and it only needed lemon, salt and pepper. I love roasting vegetables like broccoli, cauliflower and mushrooms, too. Just toss in a little olive oil and garlic.

I love a good chicken salad!
I use sliced chicken breast, spinach, romain lettuce, carrots, broccoli, cauliflower, onions, sliced almonds with raspberry vinagarrete dressing :)
