Mini Pizzas-

Ingredients:
1 Light Multigrain English Muffin, cut in half
2 TBS Tomato Paste
1/4 C Mozzarella Cheddar cheese
6 Turkey Pepperoni

Assemble, splitting ingredients between the two halves to make two mini pizzas.
Bake on 350 degrees. I don't know the exact time. 5 minutes maybe? Keep an eye on it.

Cholesterol:45mg

Total Carbohydrate: 31g

Sugar: 5g

To make this even better, use low soduim or low fat cheese.

I'm pretty new to roasting and I loved it--it really amplifies flavors while keeping things juicy and it's nice and quick. I recently roasted some salmon (450 for around 8-10 minutes) and it only needed lemon, salt and pepper. I love roasting vegetables like broccoli, cauliflower and mushrooms, too. Just toss in a little olive oil and garlic.

I love a good chicken salad!

I use sliced chicken breast, spinach, romain lettuce, carrots, broccoli, cauliflower, onions, sliced almonds with raspberry vinagarrete dressing :)
