What kind of veggies? I just went on a 9-day trip and when I got home, most of my veggies were still fine (zuchinni, Brussels sprouts, carrots, peppers). The biggest challenge is with lettuce or spring mix greens. When we buy the clamshells of salad mix, we usually open it up and leave it on the counter for a couple hours and fluff up the leaves to make sure there is'n't excess moisture. Sometimes we'll fold a paper towel and leave it in the clamshell to absorb extra moisture. Otherwise, they are usually fine in the veggie drawer of our fridge for a week or more. We keep our fridge around 40 degrees F.

If you're going to eat them cooked, cook the vegetables right away and store in the cooked form, rather than the raw form.
Buy the freshest produce you can. If you buy bagged or boxed greens, always pull from the very back of the shelf as the freshest stock is placed behind the older stock. For other produce, see if you can grab it from the boxes as the stock people are unloading it!
Fresh is always best however, if Frozen is better, I highly suggest going with Schwan's frozen vegetables, especially their blended bags. They are larger pieces of veges than the ones you get at the store, even costco's are smaller than Schwan's. www.schwans.com
i agree with the other poster. Are you sure what you are buying is fresh. We are going into growing season so maybe try to get to some farmers markets. Supermarkets that sell fresh fruit and veggies-- the stuff may already be a few days old so it won't last. Also when you get home wash your fruits and veggies and don't store in the plastic bags that the supermarket uses. they don't breathe well and will age the food quicker. I know that Trader Joes used to have veggie mesh sacks that you could use to store. The green bags are ok, but they don't always work as well either.

For me, buying frozen veggies has been the way to go to avoid waste.
I echo the freshness question: I generally go shopping for veggies about once every two weeks. Some things do go bad quicker (I'm looking at you, cucumber and mushrooms) so I prioritize eating those. But root vegetables like carrots last quite a while.
Maybe try a different grocery store; I know around here that the quality of the produce varies from store to store.
A couple of things. One, are you sure the stuff you are buying is fresh? If it's already near the end of its life by the time you get it home from the grocery store, you'll be fighting an uphill battle to make it last more than another day or two.
Two, I find that certain things are made to last! For example, I've had a 5-pound bag of carrots in my fridge that I've been eating from for more than two weeks! I just chopped some this morning to bring to work, and they are still crisp and delicious. Other veggies that tend to stay good in the fridge throughout the week and that I love for snacks are cucumbers and green/red bell peppers.
I've never tried them, but I've seen ads for those "green bags." They are supposed to extend the life of fresh produce by several days. Maybe someone out there has tried them?
