One of my go-tos is either quinoa/couscous with a ton of veggies and either beans or chicken. I usually cook the grain/seed in veggie broth and add garlic and lemon juice so it's flavorful, but you could even add a little salad dressing if you wanted. Couscous takes literally five minutes to cook so it's really fast to put together and pack up for lunches to go! Sometimes I poach the chicken in the broth I cook the couscous in- it adds some flavor :)

Hello Spark Community. I am definitely a girl on the go, so any recipes you can give me would be a help. Something easy and quick that has a lot of veggies and healthy lean meats. I am working with chicken right now.
