Meringue cookies are great and are always a hit!
You can make them plain, or dip the tips into chocolate or flavored white chocolate, add crushed peppermints, add mini chocolate or other flavored chips or candies (M&Ms Minis), add pecans or other nuts, add cocoa, add food coloring--infinite options!
They travel really well, too. I would recommend individually wrapping larger ones in cellophane or wrapping three little ones together in cellophane, as they will absorb moisture from the other cookies (and it's fun to "gift wrap" them).
