1 cup peanut butter 1 cup white sugar 1 egg Directions
Preheat oven to 350 degrees F (180 degrees C). Combine ingredients and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool. Recipe doesn't make very many, so you could double recipe as you desire.
So glad I saw your thread. I am newly gluten free and have been looking for recipes. My mom, sister, daughters, and I do a "cookie day" every year for Christmas and next weekend is our baking day.

Meringue cookies are great and are always a hit!
You can make them plain, or dip the tips into chocolate or flavored white chocolate, add crushed peppermints, add mini chocolate or other flavored chips or candies (M&Ms Minis), add pecans or other nuts, add cocoa, add food coloring--infinite options!
They travel really well, too. I would recommend individually wrapping larger ones in cellophane or wrapping three little ones together in cellophane, as they will absorb moisture from the other cookies (and it's fun to "gift wrap" them).

I remember seeing this recipe for peanut butter chocolate chip cookies with no flour. Just make sure the other ingredients of course are gluten free
1 cup creamy peanut butter 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1/2 cup semisweet chocolate chips 1 large egg, beaten 1 teaspoon vanilla extract
Combine ingredients and place spoonfuls on baking sheet. Bake at 350 for 10 min

I am very lucky to have found a group at the local HY-VEE store where the dietitian holds a meeting once a month with new products to try and the other girls share. We are having a cookie exchange on Dec. 10th not too far away. It would be nice if anyone had gluten free cookie recipes to share and I could have time to give them a trial run with my family.
