Yes, instead of heavy cream, you use a can of nonfat evaporated milk. You also use part-skim cheese, and less of it.

These substitutions also totally work for homemade macaroni and cheese sauce. Let me know if you want the recipe for that.

My light Alfredo sauce is very similar to Snoopy's, but I will post it anyway.

Light Alfredo Sauce

1 cup fat free milk
2 tablespoons corn starch
2 tablespoons reduced fat grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon white pepper or black pepper
about 1/8 teaspoon freshly grated nutmeg
3 oz fat free cream cheese
1 tablespoon light butter

Combine all ingredients except the cream cheese and butter into a medium sauce pan. Stir with a wire whisk until very well combined. Only after everything is very well mixed in, put over medium-high heat and continue to stir. After the mixture starts to get thick, add the butter and cream cheese. Continue to stir until the sauce is smooth. This sauce is great with pasta, broccoli and chicken.

Try this one !!


1 cup skim milk
1/2 cup low fat cottage cheese
1 tablespoon cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1/8 teaspoon basil (can add more, depending on your pref.)

Put all ingredients, except basil, into food processor or blender and blend until smooth.

Pour mixture in small saucepan and add basil.

Cook over medium-low heat until heated through and smooth consistency.

Add more basil, salt and/or pepper, if desired.

Let cook on very low heat for 10 minutes, stirring occasionally.

I cannot eat jarred alfredo sauce because most of it contains cream (which I can't have because I have a milk allergy).
Some things I can tolerate though. ie. yogurt, light cream cheese, goat cheese, etc,

One of my tasty favourite meals is whole wheat pasta with broccoli and some chicken breast.
Season it up with dried herbs like oregano, basil, chives, and parsley. And a bit of salt and pepper.

For the sauce, throw some light cream cheese into a pan and melt it down a bit. I thin mine out with unsweetened almond milk (very low cal) but you could use skim milk or something. The cream cheese gives it a really nice texture, and the milk thins it so it can cover everything.

Does anyone know how to make a healthier version of Alfredo sauce that still tastes yummy? My friend loves it but as much as she eats it, I would like to offer her a healthier alternative. Thank you!
