For me, I have to stay away from canned soups and mostly canned anything. I want my sodium levels to be healthy. The more I cook without canned stuff, the better I am liking my cooking.

Chicken broccoli and rice


2 (10.75 ounce) cans cheddar broccoli soup
2 cups good quality chicken broth
1 1/2 cup uncooked brown rice
1/4 tsp black pepper
1 pound boneless skinless chicken breasts cut in half
1 pound small broccoli florets
2 cloves garlic crushed
Paprika
Seasoned bread crumbs

Mix soup, chicken broth, rice , garlic and pepper in a large baking dish. Roll the chicken in the bread crumbs, place on top of the rice mixture. Sprinkle the chicken with paprika.

Cover tightly with foil

Bake at 375 degrees for 1 hour or until done.

Stews, so long as you don't use TOO fatty of a cut of meat, and emphasize the vegetable part. Another one I like is marinated tofu with roasted veggies. Tofu doesn't always have to be Asian flavors. I found one that is marinated in a balsamic/thyme that goes great with Brussels sprouts, carrots, turnips, etc. Any veggie can be roasted, so you can add in more delicate things like broccoli or even kale towards the end of the roasting process.

Another easy one is Spanish tortilla or a fritatta. Add a salad and you've got dinner.

I fix a chicken tender crockpot dinner with 1 can cream of chicken soup 1 can cheddar cheese soup and put in crock pot till tender. The soup makes good gravy ! emoticon

tried something similar last night, chicken fillets, surrounded by white aparagus, brocolli, onions and a tin of tomatoes in juice, with some herbs and cooked, added a small dollop of cream fraiche at the end and served with rice, was lovely.

will try yours also. thanks

Put washed and dried, salted and peppered chicken in a roasting pan. Peel and quarter potatoes, carrots, onions. Put veggies in a bowl to toss with some olive oil, salt and pepper. Put veggies around or over the chicken. Cover and cook at 350 for 45 minutes.

Does any one have any tried and tested oven recipes to share, preferably in one pot..havent had an oven for a few years so forgot most of what Id cook in it, except a roast dinner and potatoes etc
