The Slow Cooker Salsa Chicken from the SparkPeople cookbook is amazing (and the recipe is on sparkrecipes.com). Super easy and really tasty. I add frozen corn and cooked pinto beans in at the end.
Plus, it freezes really well. I portion it into single (micro/oven safe) serving containers with one tortilla and a bit of cheese and freeze. I defrost it in the microwave (at which point you can eat it), but then put it in the oven for 10 minutes or so until the cheese is browned. Serve with Wholly Guacamole. Delicious.
