Edit: sorry I missed the part about no berries :( Maybe this is different enough from cupcakes that it's OK? Strawberries are such a quintessential summer fruit anyway :)

For the filling: 1 lb strawberries, hulled and quartered 1 lb rhubarb stalks (about 5 or 6) cut into 1 inch pieces 1/2 orange, zested and juiced 1 tbsp cornstarch 1/4 cup agave nectar or honey For the Topping: 1 cup Quaker quick oats 1/2 cup 100% white whole wheat flour 1/2 cup light brown sugar, not packed 1/2 tsp cinnamon 1/4 cup butter, melted
Heat oven to 375 degrees. Combine strawberries and rhubarb in an oven safe dish. Add agave nectar (or honey)... Then orange juice and orange zest; sprinkle with cornstarch and toss until fruit is well coated. Mix remaining ingredients for the topping in a medium bowl then spread over fruit. Bake until topping is golden brown and fruit is bubbling, about 40 minutes. Serve with a scoop of fat free frozen yogurt or a dallop of whipped cream and enjoy!!
Butter Flavored Cooking Spray 3 medium apples (cored, peeled and cut into bite sized chunks) � cup white whole wheat flour � cup oatmeal � cup sugar 2 tablespoons molasses 1 tsp cinnamon � tsp nutmeg 3 tablespoons egg whites 2 tablespoons chopped walnuts (no salt added) 2 tablespoons chopped pecans (no salt added) 2 tablespoons chopped almonds (no salt added) 2 tablespoons shredded coconut
1. Spray baking dish with butter flavored cooking spray. 2. Preheat oven to 375 degrees. 3. In a medium sized mixing bowl, combine flour, oatmeal, sugar, molasses, cinnamon, and nutmeg. 4. Cut in egg whites with two forks or a pastry blender, one tablespoon at a time until all 3 have been added. Mixture should be crumbly. 5. Stir in nuts 6. Cut peel and core the apples. Cut into bite sized chunks and put them in prepared baking dish. 7. Sprinkle crumb mixture over apples evenly. 8. Bake 30 minutes.
Not totally healthy, but with good low fat substitutions !!
2 cups all-purpose flour 1/2 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 stick Land O Lakes light butter 1/2 cup applesauce 1 cup Splenda brown sugar 1 cup Splenda white sugar 2 eggs or Eggbeaters 1 tsp vanilla 3 cups quick cooking oats 1 cup butterscotch chips 1/2 cup chopped nuts - your choice
Preheat the oven to 350 degrees
Stir together flour, baking powder, baking soda, and salt; set aside.
In another bowl, cream butter, applesauce, vanilla, brown sugar, and white sugar until smooth, then beat in eggs
Gradually stir the dry ingredients into the wet in the sifted ingredients until well blended. Mix in oats and butterscotch chips and nuts
Chill the dough for 30 minutes.
Drop by teaspoon to a foil lined or parchment paper lined cookie sheet , un-greased !!
Place unused dough back in fridge until you are ready to bake the next batch This helps the cookie to NOT spread out too much.
Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
Makes about 3 dozen or so !

I'm struggling to come up with some healthy dessert ideas to bring to my family labor day picnic. My sister is making strawberry cupcakes and so I want to stay away from the berry or cakey desserts. I'm really struggling because I'd like something relatively guilt free when it's going to be a day filled with guilty foods.
