I mix it in with stew, chili, and soups. I also blend in some with my rice for a side dish or a cassarole. Add a small amount of cooked barley into salsa and other dips for added texture and fiber, put some cooked cold barley in a salad.
Whenever you feel like giving up..remember why you held on for so long in the first place.

I use it for soups, side dishes and salads mostly but do sometimes use it in place of rice to stuff green peppers or pablanos.
I love having barley as a side with almost any meat... I saute onions, celery and garlic in a little EVOO, add a cup of barley and about 2 1/2 cups of chicken broth plus a little salt and pepper. Bring it up to a boil, cover and simmer until all liquid is absorbed. That's it! You can also do the same thing and add a little fresh spinach towards the end so that it wilts down. I've also added some feta cheese at the very end. These are my favorite ways of making it.

It can be added to any slow cooker or casserole recipe. It is a delicious way of increasing fibre intake as it absorbs the flavours of whatever it is cooked in and it also thickens the stew.
