I always take crock pot and put 2 large cans of silverfleece saurkraut cut into 5 pieces per link and use 2 lbs if you don't need so much do 1/2 in a smaller crock pot . I buy skinless turkey polish sausage no one knows the difference . I also take corn in small crock pot hardly ever bring anything home !

Quinoa salad with cooked quinoa, corn, red bell pepper, tomato and cilantro, dressed with a mixture of olive oil, sea salt, lemon and lime.
Or make a black bean "hummus" (black beans, sauteed red onion and garlic, cilantro, maybe some sun-dried tomatoes, etc.) and serve it on homemade baked tortilla chips. Just buy some corn tortillas, cut them into triangles, spray lightly with cooking spray and bake until crispy.
COLD MEXICAN RICE SALAD DRESSING: 1 tsp. marjoram 1/2 tsp. basil 1 tbsp. chopped parsley 1/4 c. vegetable oil 1/4 c. olive oil 1/4 c. olive oil 1/4 c. wine vinegar 1 tsp. vegetable salt Blend together. 2 c. cold cooked brown rice 1 c. thinly sliced green pepper 2 sm. sliced pimentos 2 tomatoes, cut in strips 3 sliced green onions 2 chopped hard-cooked eggs Combine. Pour dressing over rice salad, toss well and serve.
1/2 cup butter, melted 1/2 cup white sugar 4 eggs 1 (15 ounce) can cream-style corn 1/2 (4 ounce) can chopped green chile peppers, drained 1/2 cup shredded Pepper Jack cheese 1/2 cup shredded Cheddar cheese 1 cup all-purpose flour 1 cup yellow cornmeal 4 teaspoons baking powder 1/4 teaspoon salt 1/4 cup chopped green onions or scallions
Preheat oven to 325 degrees
Lightly grease a 9x13 inch baking dish.
In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in cream corn, chiles, Pepper Jack and Cheddar cheese.
In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture; stir until smooth, add green onions. Pour batter into prepared pan.
Bake 1 hour, until a toothpick inserted into center of the pan comes out clean.

I need some ideas for our bi-monthly carry-in at work. Its next week with a theme of "Mexican" I need something easy, portable and does not need to hot, as all we have is1 tiny microwave. I thought of desssert, but flan looks to hard to make and fried ice cream isn`t practical....Also thought of brownies with chili powder, but I couldn`t find a recipe and it does sound kinda scary to try for the first time for a work time carry-in. HELP!!!
