Hhmm... i like to roast my tofu. I do like you have done - cube it and marinate it in something yummy - then turn oven on to about 400 and pop the tofu onto a greased baking sheet and then into the preheated oven. set timer for 15 minutes, and come back and give it all a really good stir. then pop back in the oven. Do this until tofu is nice and browned - about 45 minutes total.
Now you can serve it on rice, or pop it into a pita with lettuce or sprouts or cud or avocado or all of the above. You can toss it with pasta for a pasta salad, or eat it with toothpicks with a mocktail. Send it with your kids to school the next day for lunch.
play around with the things you marinate it in and the things you serve it with - jerk seasoning with coleslaw on a hoagie with a side of sweet potato "fries" Or the thai chili sauce served with rice, stir fried veggies and half an egg roll. we like it with regular bbq sauce, and sides of potato salad and chili beans, too
