Veggie lasagna with ricotta is packed full of protein, veggies, and flavor.
Spinach quiche is another good option.
If you're looking for primarily veggie (or vegetarian) dishes, a rich and hearty charro bean or tortilla soup (onions, garlic, celery, zuchinni, tomatoes, black beans, cilantro, chili peppers, red bell peppers, and spices) is a good option. Another idea is "Mexican" salad - rinsed black beans, corn, assorted veggies, and a creamy cilantro spicy dressing drizzled over a spinach/lettuce mix with a few tortilla strips and some low fat cheese & fresh salsa. YUM.
A very flexible, healthy, good protein veggie side dish is Parsley Walnut Salad. The nice thing is that you can substitute wilted kale, fresh or wilted spinach, or other greens for the parsley. Walnuts add a nice wallop of protein, as does the cheese.
2 bunches curly leaf parsley (about 2 cups)
1/3 cup freshly grated Parmesan cheese
2/3 cup finely chopped California walnuts
3 cloves garlic
1 t fresh ground ginger
3 tablespoons olive oil
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
