Thanks for all these great ideas. I'm way under my protein and calorie counts for the day so far, but am limited to the amount of starches I should eat. These are fantastic things to add so I can snack my way to my goals.

I needed to add more protein to my daily goals and did this by eating the whites only of boiled eggs.

Something else that would work well (since you have refrigeration/ a cooler) is smoked turkey breast chunks. My husband has become addicted to Dickey's BBQ smoked turkey, sold by the pound.

M_SGirl: I love your suggestions. The cinnamon sugar white pepper nut idea sounds intriguing. What nuts do you use and what quantities of the spices do you add? For most of our trips, it is just us two, but once in awhile we have the grandkids along and your observations about everything being more fun on a stick reminded me of how much I forget to think about with them! Awesome.

Prepackaged (for calorie count) single servings of nuts. Try toasting in different spices and salts so that you don't get bored or start chowing them down. I do a cinnamon sugar white pepper nut that can tide the 21 year old over on long trips in between breakfast and lunch, for example.
Cheese sticks are always good.
Give making your own jerky a shot. Turkey is as good as beef...low, long heat and a variety of spices and - again - prepackage into single servings.
I like to roast a pork tenderloin before trips. Cubed it becomes a "popable" snack that the kids love, high in protein and good for them. Or put on skewers with fruit because ANYTHING is more fun on a stick.
Try your own jelly rolls with protein powder. A little something for the sweet tooth will make you feel less deprived.

How about chicken fingers. They can be cooked at home and kept cool. Also, they can be eaten with fingers without too much of a mess. This is how I make them as an appetizer: Cut boneless, skinless chicken breasts into strips. Put in a kettle with a little water at the bottom. Sprinkle in some good seasons Italian dressing (the packages) Braise them slowly until done. Cool and put in baggies. Happy travels!!

We love to take road trips and have one coming up at the end of the month. The doctor has my hubby on low carbs, low cal, high protein (funny, this is what works best for me too ... how convenient to "blame" my husband's doctor! LOL) and variety can be challenging. Now, I am facing how to plan for the road trip so we don't have to go into fast food and restaurants. We have the ability to keep things cold over long periods of time, but heating things up is a problem. So! I need the wisdom of the group! Help me come up with some portable finger foods that we can tote along in the car for several days, refrigerated or not. Who can help?
