I make a cauliflower soup by chopping 1 head of cauliflower drizzle it with olive oil, then roast it at 350 with some sliced onion and about 3 garlic cloves for 30 - 40 minutes. I then boil it in a chicken stock but you could use veggie broth for 30 minutes. Turn off the heat add a can of fat free condensed milk (not sweetened) and run an immersion blender through it until it is silky smooth. When I eat it I usually melt a slice of smoked provolone into it, but it is really good without the cheese.

Decide whether you're more or less 'banning' carbs in an indiscriminate way or whether you're interested in carbs as sugars + starches, but minus fiber. That's why lentils are so good ... about half the 'carbs' are fiber. See also: tempeh and tofu. "Alternative grains" (usually not 'grains' per se, but kinds of seeds) are often good, too, especially quinoa and amaranth.

She has a lot of South Beach diet recipes (I'm not following the diet btw), but there are a lot of great recipes. We've made the baked chicken with pesto and cheese. OMG. So good!
