My Low Fat Granola Recipe
4 cups of rolled oats
2 tablespoon of maple syrup or honey
2 tablespoon of canola oil or sunflower oil
2 tablespoons of water
½ teaspoon of vanilla extract
1 cup of sliced almonds
2/3 cup of dried cherries
Preheat the oven to 140 F. key is cook it low and slow
Mix the oil, honey or maple syrup, vanilla extract and water together in a large bowl.
Stir in the oats. If you don't mind things getting a little messy, use your hands to really mix it well.
Spread the mixture out on a large cookie and place in the oven for about 30 minutes, stirring every 15 minutes so that it cooks evenly.
After 30 minutes, stir in the almonds and cook for another 15 minutes. Remove from the oven, stir in the cherries while the granola is still warm and allow to cool. You can add the cherries when you add the almonds if you prefer but I personally don't like to cook them at all.
****You can change up the nuts and use walnuts, hazelnuts or pecans
You can also change the fruit to apricots or dates******
Cook it low and slow !!!
