I always over cook to have leftovers for lunches. However I usually keep several Lean Cuisine or similar frozen meals in the freezer for those days I simply can't pull anything together. If you do go to fast foods choose the best option possible. Good luck and happy lunchin'.
I am going back to work after a month off. during the month I was able to eat fresh, healthy meals and could mix it up. I would really appreciate some more ideas. I made a lentil, tomato and brown rice side dish yesterday. It was a 3.5 out of 5 in flavor and could see taking a serving for lunch (the recipe made a ton, so leftovers are plentiful), but not every day of the week. Tuna in a salad is a good option, but again I need to mix it up more.

I do similar. We make a head lentil, bean or grain salads. We make a couple to mix it up. We'll also make bean burger's to keep in freezer, we pack frozen and they're perfect by lunch, a baggy with lettuce, tomato slice, half a whole wheat pita and good to go. Fruit, veg, nuts or seeds for smacks. Sweet potatoes work on the run, can microwave those at work. We make soups and to bigger recipe than we need, leftovers are lunches. Hummus from chickpeas or edamame with veggies.

Hi. I like to make the food I will eat for lunch for a week on the weekend. That way I know it is healthy, filling and nutritious. This week I am eating brown rice and lentils cooked together with onion, carrots, and celery. When it is done I added a can of diced tomatoes. I can eat it hot or cold. Another week I will bring a container with salad fixings: lettuce, carrots, etc. , chick peas, maybe a container with rinsed and drained tuna. A third week I will make black beans, rice, corn, and salsa. I always have a piece of fruit after. These lunches hold me fine till supper. What I love most is not having to figure out each day what to bring. Good luck!
