Salmon with fennel cooked in parchment 1 good size salmon fillet 1 fennel bulb 1 orange 1 lemon salt & pepper
thinly slice the fennel & sautÚ in EVOO salt & pepper place salmon on parchment paper, place slices of oranges & lemons and then top with the sautÚd fennel. Close the parchment to enclosed the food and bake at 350 for 18-20 mins.
Appetizer Phillo Shells fill with cocktail sauce and top with a shrimp...easy and good low calorie
Crock Pot Pepper Steak 1 pound boneless beef round steak, cut 3/4 to 1 inch thick Salt and black pepper 1 tablespoon cooking oil 3 tablespoons Italian-style tomato paste 1 14 1/2 ounce can Italian-style stewed tomatoes, undrained 1 teaspoon Worcestershire sauce 1 16 ounce package frozen pepper stir fry vegetables ( green or red peppers and onion) Trim fat from heat. Cut meat into 4 serving size pieces; sprinkle lightly with salt and black pepper as desired and a little rosemary. In a large skillet brown meat on both sides in hot oil. Transfer to a 3 1/2 or 4 quart cooker. In a medium bowl, stir together undrained tomatoes, tomato paste, and Worcestershire sauc then pour over meat in the cooker. Top with frozen vegetables or frozen pea pods. Cover and cook on high heat setting for 5 to 6 hours or until meat and vegetables are tender. (Or, cover and cook on low-heat setting 10 to 12 hours). Serves 4 to 5
You can serve this over Wild RIce.
Desert .....Maybe Angel food Cake topped with fresh stawberries.
My favorite is a big Perdue Oven Stuffer Roaster chicken, it is low cal and is so easy to cook. It comes with a pop up timer so it is cooked perfect every time. You can make lemon chicken, paprika chicken garlic chicken etc etc
Make some steamed green beans and some sweet potatoes.
For dessert make a low cal Jello Pie !!
STRAWBERRY JELLO PIE
2 cups fresh strawberries, divided 2/3 cup boiling water 1 pkg. (3 oz.) JELL-O sugar free Strawberry Flavor Gelatin Ice cubes 1/2 cup cold water 1 tub (8 oz.) COOL WHIP fat free Whipped Topping, thawed 1 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)
Slice 1 cup strawberries; refrigerate for later use.
Chop remaining berries; set side.
Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to make 1 cup.
Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
Whisk in Cool Whip. Stir in chopped berries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound.
Spoon into crust.
Refrigerate at least 6 hours or until firm. Top with sliced berries and extra Cool Whip.

maybe start with a soup? those can be pretty low cal.
if you were thinking of wanting to serve dessert, i make "strawberry shortcakes" sometimes. the dessert shells have about 80 calories. i don't think angel food cake has a lot of calories. you could just top with any berries and cool whip (light or regular-whatever you prefer.)
you could also make some fruit kabobs with some dip for a light dessert.

How many are you serving? Also what kind of calorie range are you looking for the entire dinner?
My friends and I are all working hard to lose some weight, and I would love to serve a delicious meal that will fit in with our plans! My husband doesn't like fish, but there are no other restrictions that I know of.
