Do you have a crockpot ? All you have to do is pretty much dump it all in, close the cover and 6 hours later dinner is ready !!

I always put my chicken/meat in the crockpot FROZEN
It always comes out just fine !!


ITALIAN CHICKEN

One pound boneless skinless chicken breasts cut in half
1 large can diced tomatoes
1 large onion chopped
1 large green pepper chopped
2 cloves garlic minced
1 tablespoon Italian Seasonings.

Place chicken in crockpot and place the rest of the ingredients around it.
Cook on low for 6 hours


PEPPERS AND BEEF

1 pound blade steak
1 large green pepper cut into chunks
1 large onion cut into chunks
1 jar fat free beef gravy

Place all in crockpot , cook on low for 6 hours.

I find that taking one day a week and preparing some basic things to have in the fridge is very helpful. Sunday's are my day to prep for the week. I don't do low carb but I usually make a big fruit salad, boil a dozen eggs, grill a package of chicken, and make a pot of chilli or some other type of soup. I'm a mother of five and know what it's like to feel like there is not enough hours in the day to take care of everyone. Don't give up! You can do this for yourself and for your family. Find basic easily prepared foods that you like and cook them in bulk when you have the time. You can always cook twice the amount and freeze the second portion for a later date. Good luck! Does anyone have any low carb recipes that are quick and easy, I am not a very good cook and I have a 18 month old with a heart condition and I am insulin dependant. I just started this diet and I have noticed it is very hard and I am already ready to quit. Please help! Thank you!
