OK people. I eat too many fruits/vegies to be in this challenge but I'm adding more fruits/vegies starting today since I'm going to up my carbs. Also, my limited list of 21 fruits/vegies is being expanded to include yellow squash, zuchinni, tomatsu squash, spaghetti squash, okra, and canned stewed tomatoes. It would be fair of me to join the challenge if I started eating sweet potatoes/yams: very good for you with a low glycemic index. I hate them but if I ate them enough, my body might realize they are good for me and decide that they taste good after all. How are yall doing on your fruit/vegie challenge anyway?
I'm not ignoring your challenge Dave. It's just that there are over 20 fruits and vegies that I eat routinely already. I do need to spread them out more through the day so I will follow the success stories posted here by you and others and use them to inspire me to eat vegies for breakfast (The Schwarzbein Principle Way). I might jump in now and then with some tips for tasty ways to get those plant foods down.
