I love this seasoning if I'm cooking plain chicken breasts: http://www.amazon.com/The-Spice-Hunter-Sea soning-1-9-Ounce/dp/B003KSQBMK It doesn't have any salt in it but the flavor is really great.
Marinating in italian dressing, or taking italian dressing powdered mix and pressing the chicken into it before cooking are both a few more ways to infuse some flavor into plain chicken.
I also try to find different ways of making chicken, so I'm not eating it plain. You can pound out the meat so it flattens out some, then put a bit of cheese and some broccoli in it, then roll it up and secure with toothpicks and bake.

1 pound boneless skinless chicken cut into bite size pieces 1 can diced tomato - with the juice 2 cloves garlic 1 onion chopped 1 green pepper chopped 1 tablespoon Italian Seasonings.
Saute the garlic, onion and pepper in a bit of olive oil. Once soft, take out place in a bowl and keep warm.
Saute the chicken in a bit of olive oil until cooked, add the can of died tomato with the juice. Add back the veggies and add the seasoning.
Cook until all is warmed through.
Serve with some Parmesan cheese

There's a 4-part bottle of different spice mixes sold in the bakery section of Publix that's supposed to be used to make bread dips. It's actually called "Bread Dip Seasonings" --flavors are "Tuscany Blend," "Sicily Blend," "Garlic Rosemary Blend," and "Parmesan Blend." I use it to spice up everything from eggs, to potatoes, to vegetables, to meats. Fast way to add a different themed spice taste to a chicken breast.

I like to marinate my chicken in a mixture of balsamic vinegar, olive oil, dijon mustard, salt, and pepper. Happy grilling!
