I love Lentil Soup during cold weather. This is my recipe:
1 lb. Bob Evans regular sausage 1 large onion, chopped 4 large stalks celery, chopped 1/2 cup shredded carrots 1 lb. bag dried brown Lentils 1 can College Inn Beef Broth (low fat)
I brown the sausage in a large skillet along with the chopped onion and celery. Drain the sausage (although this brand rarely has much grease). You can wash the browned inredients with hot water in a collander if you really want to rid it of any extra fat (but it cuts down the soup's great flavor)). Sort and rinse the dried lentils. Place lentils in a stock pot, add the beef broth and one can of water. Bring to a boil. Add the browned sausage, onions and celery. Add the shredded carrots and cut the heat down to Simmer. Simmer for at least one hour adding more water (or additional Beef Broth) if desired. This isn't the prettiest soup you'll ever fix---looks rather like brown mud---but believe me, it is delicious. When my daughter went off to college, she liked it so much that she would fix it in a crock pot in the dorm kitchenette. Everyone would be sniffing the aroma wondering what the delicious smell was and begging for a sample.

Here is a recipe that I threw together one time after a party where I wound up with 2 trays of veggies leftover. I just tossed all the leftovers into a pot, added a few things and let them cook down... very little fat or calories but loaded with flavor and nutrition! It can be adapted as to what you have available! I call this "Ultimate Vegetable Soup"
Ingredients 8 cups broccoli chopped 8 cups cauliflower chopped 4 cups carrots chopped 2 large stalks celery chopped 1 cup chopped onion 3 cups chopped zucchini 1 cup chopped green peppers 1 large can whole peeled tomatoes 1 large can crushed tomatoes 5 cloves garlic minced 4 cups water 1 can small red beans 1 can small white beans salt and herbs to taste (I use oregano, basil and cayenne pepper)
Directions Makes 10 2 -cup servings
Chop all vegetables into large chunks. Combine in large soup pot with water, tomatoes and beans and seasonings as you wish. Allow to come to a boil and then turn down to a low simmer until all vegetables are tender. As the vegetables cook down they will release their own juices and this will become more liquidy so be sure to use a very large pot so you don't have spill overs. This is a very hearty and satisfying soup with very little calories and a lot of fiber.

I have been losing weight the last couple of months before joining Spark People. I joined Spark People to surround myself with positive like minded people wanting to acheive the same goal as I with reaching my target weight!
I have found that soup is a great meal for me who likes to feel full after a meal. I have made a great fat free spicy spinach and lentil soup but am a little bored of it and would like to try different recipes that are simple, nutritious and tasty!
