For peppermint, I might try crushed candy steeped in the milk for 24 hours, crushed candy mixed in during the fudging and letting it sit for two days, peppermint-flavored melts, or essential oil.

I use a recipe I found on hungry-girl.com.
Ingredients: 2 cups canned pure pumpkin (Libby's is best!) One 18.3-oz. box Betty Crocker Fudge Brownies mix 3 tbsp. white chocolate chips, roughly chopped 1 standard-size candy cane or 5 mini candy canes, lightly crushed
Directions: Preheat oven to 350 degrees. Spray an 13" X 9" baking pan with nonstick spray and set aside.
In a large bowl, combine pumpkin with brownie mix; stir until smooth. (Don't add anything else!) Transfer mixture to the pan.
Bake until edges are slightly firm and top center is dry to the touch, about 35 minutes. (Batter may look undercooked; this is okay.)
Immediately sprinkle with chopped chocolate chips and crushed candy cane(s). Allow fudge to cool.
Cover with aluminum foil and refrigerate until completely chilled, at least 2 hours. (This fudge tastes best when chilled overnight.) Cut into 36 squares and serve!

Note: This is DELICIOUS, and was a HUGE hit at the birthday parties and as a gift! I used a 13x9 rather than the original 8x8, SO good.
I'm selfish, impatient and a little insecure. I make mistakes, I am out of control and at times hard to handle. But if you can't handle me at my worst, then you sure as hell don't deserve me at my best.
2 (10 ounce) packages white chocolate chips 1 (14 ounce) can sweetened condensed milk 1/2 teaspoon peppermint extract 1 box of 10 candy canes, crushed 1 drop red food coloring * you can add more if you like it more red, or you can just swirl the food coloring in for a different effect *
Line an 8 inch square baking pan with aluminum foil so that the foil overhangs all four sides. Spray the foil with Pam
Combine the chips and sweetened condensed milk in a saucepan over medium heat.
Stir frequently until almost melted, remove from heat and continue to stir until smooth.
When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes.
Spread evenly in pan. Chill for 2 hours, then lift the foil out of the pan and cut into squares.
