I found a recipe online and tweaked it a bit for lower calories and to make it a little more fancy...
2 whole wheat pitas (@150 cal)
olive oil cooking spray
1 wedge Laughing Cow Light Garlic Herb Cheese (35 cal)
1 tbl I Can't Believe it's not Butter light (45 cal)
2 tbl skim milk (20 cal)
2 tbl shredded fresh parmesan cheese (40 cal)
fresh ground pepper
1/4c fresh spinach chopped (10 cal)
4 greek olives sliced (50 cal)
chopped red onion
Heat oven to 400. Spray top side of each pita lightly with olive oil spray.
Warm pitas in oven appx 5 minutes (they will begin getting crisp)
Remove from oven and place half each of the spinach, olives and onion on each pita spreading evenly.
In small saucepan melt the margarine over medium heat. Add cheese wedge, parmesan, ground pepper to taste and milk. Warm until smooth.
Place half of the cheese sauce over the vegetables on each pita.
Bake in 400 oven for 6 minutes.
Total calories for two pitas is appx 500.
I wanted a vegeterian dinner when I made these and next time I may add some sauteed mushrooms. I think broccoli would also be good on these as well as chopped tomatoes.
I think diced chicken or shrimp or even beef would be good as well.
There are several flavors of Laughing Cow and each wedge of the light variety only has 35 calories but is full of flavor and very rich and creamy. I felt like I was indulging and finished my meal full and satisfied.
The kids even liked it!
