I really did like the poblano peppers stuffed, even if hubby was not so fond of them. The peppers have a great taste so I just might start adding them to salads, eggs, potatoes, etc, just like I do the bell peppers.

Thanks :) I just need to not let him know ingredients, you know,be sneaky!...I make the Balsamic vinegar & honey chicken and he loves it. If he knew what was in it he would refuse to taste.....

Okay - then next time char and scrape off peel. chop and add to homemade salsa. report back how it goes!

Thanks for these suggestions....I charred and stuffed them with seasoned ground beef,black beans,and corn,topped with cheese and baked til the cheese melted...They looked great and tasted really good, but husband scraped the filling out and ate with salsa and doritoes....He is usually not impressed with my "fancy" cooking ideas....

search for recipes for Chile rellenos - there are a lot of different types, some more eggy than others. find one you like. Yum!!

That sounds yummy. One of the "authentic" Mexican restaurants near me makes a chicken dish with a creamy sauce (more mexican sour cream than a white sauce) that has nice pieces of poblano in it. So I would think that anywhere that you would normally use green peppers but would like a little more heat, go for your poblanos!

I bought some poblano peppers the other day, now what do I do with them? Any recipes or suggestions? I thought of stuffing them with taco flavored meat and Spanish Rice....??
