I really did like the poblano peppers stuffed, even if hubby was not so fond of them. The peppers have a great taste so I just might start adding them to salads, eggs, potatoes, etc, just like I do the bell peppers.
Thanks for these suggestions....I charred and stuffed them with seasoned ground beef,black beans,and corn,topped with cheese and baked til the cheese melted...They looked great and tasted really good, but husband scraped the filling out and ate with salsa and doritoes....He is usually not impressed with my "fancy" cooking ideas....
That sounds yummy. One of the "authentic" Mexican restaurants near me makes a chicken dish with a creamy sauce (more mexican sour cream than a white sauce) that has nice pieces of poblano in it. So I would think that anywhere that you would normally use green peppers but would like a little more heat, go for your poblanos!
