Great 5 mile run this evening....just had to get it in as the weather has been stellar! Got home and was ready for a protein packed dinner of "Protein Pumpkin Pancakes"!! Yes, I did eat the whole batch thank you very much! Recipe - 1/2 cup cottage cheese, 1/2 cup pumpkin, 1/2 cup oats, 5 egg whites, 1/2 tsp pumpkin pie spice, 1/4 tsp baking powder. Blend well and pour onto 350 degree griddle sprayed with Pam. Flip when bubbles form. Makes 5-6 pancakes. Yummo!
