I roast cauliflower and broccoli and sprinkle some ground hot peppers along with some olive oil. It is like nutella to me: I can't stop eating this combination! If I were to boil cauliflowers or broccoli, probably I won't be able to eat either one. But this roasting with some olive oil and some ground hot peppers... Incredibly delicious and addictive.
Sauté a bunch of vegetables in a nonstick pan, sprayed with a bit of Pam. I usually use some combination of onion, bell peppers, garlic, broccoli, mushrooms, zucchini, or carrots. Mix 1/4 cup of vegetable (or beef or chicken) stock with some spices- I usually use cumin/chili powder/red pepper or curry/red pepper or Oregeno/basil. Pour it over the vegetables.
Sometimes I'll use a small can of stewed tomatoes, mix the spices with those first (without draining them) and pour them in the pan and cook for the last 2-3 minutes.
I eat it straight with a fork but you can add rice too.

I love spinach steam it in a bit of water add lots of garlic or fat free Italian dressing. One the other things I make is spicy oven fries. (though potatoes aren't really a veggie) Cut potato into fries, add 1 table spoon olive oil, cayenne pepper, garlic and cumin mix in a bowl and then place on cookie sheet and cook until done...I like mine crispy.

Not really a vegetable dish but a very quick side. I just throw some frozen green beans in a microwave safe bowl, cover them with pepper and cayenne pepper and paprika and then nuke them for a few minutes. Spicy and the firmness of the beans is prett good. Obviously not as good as steamed the correct way, but so much quicker and only 1 dirty dish that can go in a dishwasher :)
I'm not sure how quick it needs to be but how about:
- vegetarian chili (include jalapenos or red pepper flakes)
- gazpacho (ditto) - faster to prepare than vegetarian chili
- Thai mango salad: one firm mango, peeled and either cut into julienne strips or chopped; one red pepper (seeded and either cut into strips or chopped); one Granny Smith apple (peeled, seeded and cut into strips or chopped); one jalapeno (seeded and chopped fine); about one tablespoon of finely sliced red onion; toss with a dressing containing 1 tablespoon of orange juice and 1-2 teaspoons of lime juice. Sprinkle chopped peanuts on the top if you want
