I usually cook it for breakfast in half water half almond milk, cinnamon, nutmeg, splash of vanilla. Then when done i add thawed frozen blackberries and chopped toasted walnuts. Yummy! But also, you can really use it in any recipe that calls for rice. it cooks in about the same time, and uses the same water proportions as white rice, so it is a great whole grain substitute. Just be sure to rinse it well first to help get rid of the bitter taste it can have. :)

I find I like it best in cold dishes. There are some great recipes on SparkPeople for quinoa and black bean salad.

I second the mango... so yummy! You can also use it like oatmeal or make patties out of it. I saw a recipe for mac & cheese as well.

Thanks for the great ideas! I'd like to eat more quinoa but have been having a hard time figuring out what to do with it!

If you like a mediterranean taste, try quinoa with chopped cucumber, tomato, cilantro and sprinkle with red wine vinegar (little onion optional). Refrigerate to absorb flavors and enjoy!!

Quinoa Omelette/Scramble: In small non-stick fry pay -- use coconut or olive oil, quinoa, veggies of your choice (I like fresh spinach and mushrooms). You can use anything !!!

You can do a sweet version as a scramble using fruit -- mango is wonderful!!
