I love a mix of diced peaches, frozen blueberries and frozen strawberries (chopped a bit smaller) let them marinate together, then simply use a reduced fat yoghurt - I like the peach and mango mix or strawberry - either goes well. Cheap, VERY healthy and VERY quick, the colours look amazing together, AND just as important - IT'S YUMMY :-)

2 apples, peeled, cored, any type 2 oranges, skin off, segmented 2 cups orange juice 1/4 cup diced dried fruit (cranberries or blueberries or apricots or all of them) 1/4 cup diced dates
Put above in a bowl + refrigerate for 3 to 4 hours before eating. Eat alone or over yogurt or cottage cheese.

Pumpkin Pie without the Pie
1 15 oz can of pumpkin 1/2 cup of splenda 1 1/2 cups of skim milk 2 eggs
Mix the milk with the pudding. Fold in about half the whipped topping till a wonderful chocolately mouse forms. In the pan you plan to bring, put in a layer of the mouse top with cherry pie filling, then more mouse, filling till you run out. Top the last layer with the remainder of the whipped topping. Crush most of the cookies. Reserve in a plastic bag. Top the dessert with cookie crumbs only JUST BEFORE SERVING (if the cookies sit on the dessert too long, they will get soggy). If desired top each one with a single Oreo cookie.
Note: This consent would also work using sugar free butterscotch pudding instead of chocolate with sugar free apple pie filling instead of cherry and reduced fat cinnamon gram crackers instead of Oreo.

The little cups are cute, or you could even make as one big cake and share it. It does not taste like a "light" dessert, it's very good. My boyfriend, who doesn't even usually like a lot of sweets, liked them. I topped mine w/ a tsp of raspberry jam, and I used a graham cracker crust I found on the Weight Watchers site (just google it) instead of the cookies since I forgot to buy them.

Sometimes if I'm craving a little something sweet but don't have much around I'll toast a piece of wheat bread and spread with a low sugar preserve. Sweet but still healthy! :)
