For an apple dessert you can core the apples and then take 2 or 3 red hots (depending on how cinnamony you like it and then put brownsugar in the middle as well. Bake at 325 for about 30 minutes and eat. It is super yummy and not too bad on calories :)

I made this cheesecake over the weekend and it was delicious.
150 calories per slice with 20g protein as it is. If you wanted to lower the carbs, but raise the cals, you could use low fat cream cheese (or full fat) instead of the non-fat. Then just add whatever toppings you feel are best. nuts, whip, sugar free syrups, fruit (not sure exactly how you low carbers operate haha)

There's lots of cream cheese based desserts out there, too. My husband's grandmother makes something with cottage cheese, cream cheese and sugar free Jello. Maybe some Cool Whip in there, too. I've done cream cheese, mixed with sugar free jam and a little Cool Whip for a cheesecakey dip type thing. You can search on sparkrecipes.com for low carb desserts or Google "low carb desserts", too.
