Any carbs at all? Or just not simple carbs like the ones you mentioned? Do you want veggies in the soup? If veggies are OK, I've made a yummy version of Mulligatawny soup that is loaded with eggplant, apples, mango, chicken, and as a surprise element - pistachios! A restaurant around here had it once and I was like "I can make that!" Here's the recipe:
