Weight Watchers Gumbo

sorry I don't have the recipe as it was from a friend's cookbook.

I'm not sure if my cabbage soup would taste right without barley, but the potatoes are completely optional.

Shredded cabbage
Some form of acid, probably apple cider vinegar
Meat stock, preferably chicken

Turnips and Parsnips probably go.
Celery sounds okay.
A bit of green pepper?
Unsure of what spices to use, a dash of hot sauce or worchestershire goes pretty well.

Sorry I can't remember a good recipe for it... pretty much cabbage and any vegetable with a similar texture, boil it to death with acid and meat, find a boilable grain to cook in it if you can.

Or there are always tomato-squash curry purees.

My favorite stews are bean-based.

Any carbs at all? Or just not simple carbs like the ones you mentioned? Do you want veggies in the soup? If veggies are OK, I've made a yummy version of Mulligatawny soup that is loaded with eggplant, apples, mango, chicken, and as a surprise element - pistachios! A restaurant around here had it once and I was like "I can make that!" Here's the recipe:

I'm looking for yummy soups that don't have any pasta, potatoes, any carbs in them. Anyone have any great recipes to share? :)
