I'm taking down some of these suggestions as well. I've had it with a vinaigrette before and pesto. I love it.

I love that it is versatile and goes with anything. We substitue chowmein noodles with this when doing stir fry or substitute pasta with this when doing spaghettie (extra yummy with meaballs) and also goes well with alfredo. :)

We love to toss it with a little steamed broccoli, grilled chicken, a little pesto, black pepper and a smidge of hard parmesan. It's so filling and so satisfying and it really seems like we're eating something rich. Thanks for posting - I've added spaghetti squash to the grocery list if we can still find them!

I LOVE spaghetti squash too! I love all of the suggestions everyone shared! Thanks! I usually bake it by cutting it in half lengthwise, scooping out the seeds, giving it a light brush with olive oil and place face down on a tray (use foil for easy clean up). I have to admit that I can eat an entire squash with just a little salt, but try to share and just eat half! Joan

I LOVE spaghetti squash! I have a couple of ideas... 1. Microwave or bake the squash as usual. In a saute pan, cook some thinly sliced onion in a little olive oil. Add some marinated artichoke hearts, capers, and chopped tomatoes. Stir in the squash and serve hot with some parmesan or feta cheese on top.
2. Saute some sliced onions until soft. Add minced garlic and sliced zucchini and cook until soft. Stir in some halved grape tomatoes and a little chicken/vegetable stock. Mix in the cooked squash and some shrimp. Cover until shrimp are pink and add some feta cheese.
Basically, you can treat it just like pasta...I have found that these two combinations work really, really well though :.)
Did you know butternut squash shreds the same way? I wouldn't recommend combining it with a tomato based sauce though.
I'm not sure what you have tried from your description, But I like to toss spaghetti squash with chopped nuts and shredded apple.
And pasta salad you'd make can be made with the shredded squash. Toss with diced raw veggies like onion, olives, tomatoes.
Shred fresh spinach, parsley, onion, garlic and toss with the shredded, cooled squash. Let the flavors med a few hours
Consider the same idea only use shredded apple, pear, chopped strawberries, orange sections, and chopped walnuts or pistachios.

I love veggies and recently discovered spaghetti squash...yum! I usually cook it in the microwave first and then toss it with olive oil/spices in a pan to add more flavor. I could make a meal out of this stuff, so I was hoping to find some new great ideas on how to add some excitement to this vegetable while adding plenty of healthy calories. It seems I come across a lot of the same ideas online, so I was hoping some of my fellow SP members would have some creative ideas they have come up with on their own. Thanks!
