There are times I get so hungry that I could really go on a binge and eat all sorts of unhealthy stuff. But one night during one of these episodes I kept control and stirred up the following. It's so filling, I can eat as much as I want without feeling guilty, and I get my veggies worked in too!
There's no set recipe; just flavor to suit your taste, but this is what I do:
Slice up two or three (or however many you want) zucchini or summer squash into a skillet. Chop up one or two Roma tomatoes to taste (you can also use canned, no salt-added, diced tomatoes). Chop up some onion. Shake in some garlic (fresh or dried) to taste. Chop up fresh mushrooms. Add soy sauce to taste, pepper, a little water, stir occasionally, and cook down until the liquid is gone. I personally like to cook it down until it browns somewhat, but, again, that is up to you. I then spray generously with I Can't Believe It's Not Butter Spray or Parkay Spray. You can also put on a little parmesan cheese.
Lots of veggies, great satisfaction, feeling full and healthy......Priceless!
