My favorite method is to take squash and zucchini and fresh tomatoes and lay them into a casserole dish.

I cuth them on a half moon and line the inside of the casserole dish...standing up so you can see the color of the vegetables... make alternating lines so you would have grren, red, yellow... sprinkle with a little olive oil and some fresh thyme, basil and oregano....

Very tasty!

Hi everyone,

There are times I get so hungry that I could really go on a binge and eat all sorts of unhealthy stuff. But one night during one of these episodes I kept control and stirred up the following. It's so filling, I can eat as much as I want without feeling guilty, and I get my veggies worked in too!

There's no set recipe; just flavor to suit your taste, but this is what I do:

Slice up two or three (or however many you want) zucchini or summer squash into a skillet. Chop up one or two Roma tomatoes to taste (you can also use canned, no salt-added, diced tomatoes). Chop up some onion. Shake in some garlic (fresh or dried) to taste. Chop up fresh mushrooms. Add soy sauce to taste, pepper, a little water, stir occasionally, and cook down until the liquid is gone. I personally like to cook it down until it browns somewhat, but, again, that is up to you. I then spray generously with I Can't Believe It's Not Butter Spray or Parkay Spray. You can also put on a little parmesan cheese.

Lots of veggies, great satisfaction, feeling full and healthy......Priceless!
