I sub Corn or Rice Chex for chips in taco salad. it might work well for oriental salad too.

Now would be a great time to give shirataki tofu noodles a try. They taste a lot like regular noodles, but are super low in calories, and loaded with protein.
It does sound like this is supposed to be a dish with uncooked noodles, though, so my guess would be to just skip them entirely, or to use rice crackers, bell pepper strips, and/or water chestnuts for crunch.

I have a receipe for an oriental salad with brocolli slaw, coleslaw, etc but it calls for toasting ramen noodles and slivered almonds. When I look at the calorie count on the ramen noodles it says 190 calories for only half of the package. Is there something else I can substitute to get that crunch and taste for less calories?
