Thanksgiving dinner can be low calorie depending on how you cook. Here are some low calorie favorites that make it to my table almost every year: turkey, fresh cooked broccoli with nothing but salt (or asparagas or green beans), dill pickles, rutabegga (cooked and made up like mashed potatoes - you can use skimmed milk and very little butter), relish tray with carrots & celery, and fruit for appetizers.

Of course there are the potatos, gravy, cranberry sauce,stuffing, olives and pie. I can fill my plate with the better things and just a little of the others. Half a slice of pie is just as good as the whole thing. I heard someone say Thanksgiving dinner can be 8,000 calories. That just sounds gross. It doesn't need to be!

My sons really appreciate taking home the leftovers. I save back just a sensible amount. That way I'm not tempted by them.

Low cal - low fat

Roasted Autumn Veggies

2 tablespoons olive oil
1 large sweet potato peeled cut into 1 inch pieces
1 large white potato peeled and cut into 1 inch pieces
1 cup baby carrots
1 zucchini, cut into 1 inch slices
1 bunch fresh asparagus, trimmed and cut into 1 inch pieces
1/2 cup roasted red peppers, cut into 1-inch pieces
2 cloves garlic, minced
1/4 cup chopped fresh basil
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Preheat oven to 400 degrees

Spray 2 baking sheets with cooking spray

Place all veggies in a very large bowl, drizzle the olive oil and mix to coat
Sprinkle the seasonings on top and mix again.

Bake until all of the vegetables are tender, about an hour

Here is a light dessert

LIGHT HOLIDAY TEA CAKES

3 egg whites
1 cup unsweetened applesauce
1/4 cup fat-free half-and-half
1 teaspoon vanilla
1 cup Splenda
1 all-purpose flour
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
1/2 cup chopped dried pineapple
1/2 cup dried cranberries, preferably orange flavored
1/2 cup chopped almonds or walnuts

Preheat oven to 350 degrees.

In a large bowl, beat egg whites until stiff. Fold in applesauce, half-and-half and vanilla.

In a separate bowl, combine Splenda, flour, baking soda, spices.

Fold dry ingredients into wet mixture.

Fold in pineapple, cranberries and nuts.

Spoon batter into mini-muffin pans that you have sprayed with cooking spray.

Bake 12-15 minutes. Remove, cool.

Dust with confectioner's sugar if desired.

Makes about 2 1/2 dozen

A couple tips if you're interested!

For the sweet potatoes... just cut them into chunks and then roast them... they carmelize themselves and are soooo good you don't need the marshmallows. Just toss them in a little olive oil, salt, cinnamon, nutmeg, and if you want you can add either agave nectar or maple syrup for a little extra sweetness.

I made the Roasted Vegetable stuffing last year and it was delicious!! You add veggies and cut down on carbs with that one!

I'm getting excited for Thanksgiving! I love it. I love to cook lots and lots of food. This year I'm really happy I get to slim down some of my favorite recipes. I'm looking to add some new ones as well! I started this thread hoping we can all share some recipes and find some new ones too!

I'l be slimming down my stuffing and marshmellow candied yams ;) I don't know how yet, but I will..;)
