I'm just starting out eating (mostly) Vegan...this sounds great! I can't wait to try it. Soup is always a good option because I don't really *have* a lunch break--I'm a teacher :) Need something to slurp fast while I'm attending to 8 and 9 year olds who can't figure out how to heat up their own lunches :P

This is a recipe that I posted on sparkrecipes... it is made with beef stock and heavy cream but I am sure it would taste just as good with vegetable stock and soy or almond milk (or one of the other alternatives). I got it from a "soup bible" cookbook...
