I don't know what recipe you're baking, so I'm not sure what consistency you're going for or how the egg whites are being used. When I had vegan roommates, I always used Bob's Red Mill egg replacer. It works great in cakes, bread, cookies... pretty much anything that calls for eggs as a binder. Not good for glazes or fluffy meringue kind of stuff, though, obviously. :P

I don't know if they substitute for egg whites exactly, but ground flax seed mixed with water works great as an egg substitute. Also Ener-G Egg Replacer is fab!

I did a google search and found some interesting information. It's too much to copy in here so do a google search on "vegan substitute for egg white." The first one that appears is from the site "chefinyou." It actually has a chart with substitution information.
