1/2 cup applesauce 2 eggs 1/2 cup sugar 2 cups flour 2 tsp baking powder 1/2 tsp salt 2 cups any fruit ( I have used blueberries, strawberries and apples. When using apples, sprinkle a little cinnamon/sugar on top before baking)
Using paper liners in your muffin/cupcake pan.Bake in a 350 degree oven for 30 minutes . Makes one dozen muffins.
These freeze well! I put them in individual plastic sandwich bags and can be warmed up in the microwave for 30 seconds !!
Not sure if you can use this basic recipe with veggies but you could try a batch and experiment !!
Is there a basic muffin recipe which would give the ratios of flour, eggs, sugar, baking powder and baking soda to fruit or vegetables? I want a recipe that I can change the fruit/vegetable based on what I have around. Thinking of banana, strawberry, pumpkin, apple, applesauce, blue berry, carrot, zucchini, etc.
